Thanks for your patience, @dbradish-microsoft — this was recently picked up as an outstanding open issue for the ARM Deployments team to review.

This looks resolved on the CLI side. On current CLI (2.85.0), az bicep publish --help shows:

--with-source : Publish source code with the module.

— with no [Preview] marker, which matches publishSource having gone GA in Bicep 0.27.1. So the preview annotation has already been dropped from the command metadata that the reference doc is generated from.

If the published learn.microsoft.com/cli/azure/bicep#az-bicep-publish page still shows "(Preview)" it's just waiting on a doc regeneration from current metadata rather than a code change. I'll close this as resolved — please reopen if the rendered doc still shows preview after the next refresh. Thanks for flagging it!
