ci: automate releases with release_please

Description

We should add automated release PRs with release_please so it's easier to publish new versions for this action.

We can take inspiration in the setup for Very Good CLI or Very Good Workflows.

Requirements

• All CI/CD checks are passing.
• There is no drop in the test coverage percentage.
