Broken Links for Campus Dining and Summer Gym Hours

There are two more broken links in the Readme's "Campus Resources" section. The summer recreation link for Gym Hours, and the link for summer dining hours are outdated. You can choose to fix one, or both of these links, but the issue will remain open until both are fixed.

Hey @Nijel05, I saw your open pull request for the emoji key link fix. It looks like that issue was already handled, but maybe you could take on this one.

I found this link: https://goslugs.com/sports/2025/1/27/hours , for the summer recreation hours (which includes the gym hours).

This link looks like a suitable replacement for the dining hours link as well: https://dining.ucsc.edu/locations-hours/ .
Right now the dining hours show everything as closed, but I'm sure that will change in the coming weeks, and definitely will be by the time we arrive on campus.
