chore(merge): Reconcile origin/main into sentry hardening branch

Resolve merge conflicts by preserving Sentry hardening defaults while
adopting main's deferred xcode-ide startup flow and gateway updates.

Keep internal-only telemetry posture, maintain startup handshake
improvements, and align changelog entries under Unreleased.
