Bump Sentry compatibility on start.spring.io after fixing Spring Boot 4.1 + OTel

We're currently solving Spring Boot 4.1 + OTel agentless setup issues. Once done we should bump start.spring.io so selecting Sentry for Spring Boot 4.1 is possible.
