We are using the magnificent Lion's Mane mushroom, a favorite in modern plant-based circles for its incredible meaty texture. By pressing it into a succulent 'steak' and glazing it with a deeply savory miso-maple reduction, we create a center-piece that rivals any traditional katsu. Paired with the nutty depth of black forbidden rice and the brightness of quick-pickled vegetables, this bowl is a celebration of texture and mindful energy.
