Improve documentation and update default LLM models

- Refined README with clearer structure and more concise instructions
- Updated default models to newer versions (Claude 3.5 Haiku, GPT-4o-mini)
- Simplified installation instructions and added quick start section
- Updated model lists to reflect current available options
- Removed import map requirement from run.sh
- Added new dependencies in lock file
