Set user for the structurizer container

Related Issue

Trying to run just arch view was giving me Data directory /usr/local/structurizr is not writable since the container did not have permissions to write to the host filesystem.

Changes Proposed

• explicitly set the user in the compose file to whatever the dev's user's UID and GID is when running.

Additional Information

• Default to 1000:1000 if not provided in the compose file

Testing

• Try running the just arch commands, like just arch view
