chore: add chore items to release validation tracker

We wanted teams to focus on validating functional changes on main (before RC cut) using nightly builds, so the testing tracker is updated every day with the PRs that are merged in main but we are only tracking feat, perf and fix PR.

Since we have weekly releases now (shorter scope for each release )we want to also track the “chore“ PRs.

Expand PR filtering to include chore

• Updates RELEVANT_TITLE_REGEX in post-merge-validation-tracker.mjs to match chore titles (alongside feat|perf|fix|bump), ensuring chore PRs are included in the release validation sheets.
