EDK II upstream removed GCC5 toolchain tag on 2026-02-26.
Continuing to use GCC5 results in the following build error:

build.py...
: error 4000: Not available
[GCC5] not defined. No toolchain available for build!

Replace GCC5 with GCC to align with upstream changes and restore build functionality.
