Rename viscosity_std to viscosity_fit_residual#295

Rename the output key and related variables from `viscosity_std` to `viscosity_fit_residual` to more accurately reflect that the value is the 1σ uncertainty from the linear fit residuals (fit-based uncertainty) rather than a generic std. Updated helfand_viscosity and viscosity_ensemble return values, adjusted internal variable names, and propagated the change to tests, docs, and the example notebook.
