* the template's own CI checks for a plain version such as 1.2.3, without a leading v * each merge to main is still tagged vX.Y.Z, so copier update finds the release as before
* new projects start with 0.1.0 in VERSION, without a leading v * the shipped CI checks for that format and adds the v for release tags, as template-github-ci 3.0.0 does * existing projects remove the leading v from VERSION once when they update
* README describes the plain VERSION format and how existing projects drop the v * CHANGELOG.md records the change

VERSION holds a plain X.Y.Z, such as 1.2.3, in this template and in the projects it generates; CI adds the v itself for release tags. Breaking for existing projects, hence 3.0.0: they remove the leading v from VERSION once. Merge after karshosphere/template-github-ci#9; once that is tagged v3.0.0, a follow-up commit here records it in .github/.copier-ci-answers.yml.
