Fix pnpm build approvals

Summary

• add pnpm build approvals for sharp and unrs-resolver
• prevent pnpm 11 from failing installs with ERR_PNPM_IGNORED_BUILDS

Validation

• reproduced the failure with pnpm install on pnpm 11.7.0 before the change
• reran pnpm install after adding pnpm-workspace.yaml; sharp and unrs-resolver postinstall scripts ran and install completed successfully
