nixpkgs `26.05` will be final release to support `x86_64-darwin`. Releases 26.11 onwards will not support the system. Tackles nix-system/default#1 https://nixos.org/manual/nixpkgs/unstable/release-notes#x86_64-darwin-26.05

thanks, I've pushed it to the branch. I propose we also merge this PR to main in 12 months. Long term it would be nice if that mechanism was part of nixpkgs since they are the ones controlling the supported systems. |

26.05will be final release to supportx86_64-darwin. Releases 26.11 onwards will not support the system. However, many people are still relying on this architecture. Unitl then, please consider creating afuture-26.11branch or similar (I can't propose PRing to a new branch)Tackles nix-system/default#1, nix-systems/nix-systems#17
