sink: isolate statistics and record DML metrics on flush - #6676
Move Statistics and its private metrics to downstreamadapter/sink/statistics to narrow imports.
Record DML rows and approximate original bytes through event flush callbacks across sinks.
Check List
Tests
Manual checks: Classic/NextGen package loading (go list -mod=readonly -test), formatting, and git diff --check.
Unit tests were not run locally.
Questions
Sink-type metric labels are removed; dashboards are updated.
Release note
Count sink DML metrics on event flush using approximate original event sizes; remove sink-type metric labels.
Summary by CodeRabbit
Monitoring
Sink dashboards now report flushed DML row counts, approximate write bytes, and execution errors. DDL activity and execution metrics are also available.
Grafana panels clarify that write-byte values estimate original DML data before encoding or compression, and that row counts reflect DML rows flushed downstream. Write-byte charts no longer separate results by sink type.
Batch execution statistics previously shown in sink metrics are no longer reported.

The PR moves sink DML and DDL statistics into a dedicated package, migrates sink implementations and MySQL writers to its API, and updates metric registration and Grafana dashboards.
Changes: Sink Statistics Migration
Layer / File(s)
Summary
Define sink metrics and recording behavior downstreamadapter/sink/statistics/*
The package defines DML and DDL metrics, records DML results after flush and DDL execution results, and removes bound metrics when closed. A test covers DML flush timing.
Global metric initialization delegates sink metric registration to the new package. The former sink-specific DML and execution DDL metrics are removed from pkg/metrics.
These sinks use the new statistics type and track DML events. Kafka, Pulsar, and cloud storage record applicable send or write errors. Cloud-storage payloads no longer carry row counts.
Migrate MySQL writer accounting pkg/sink/mysql/*, pkg/applier/redo_test.go
The MySQL writer uses the new statistics type and records DML errors. Its execution closure no longer returns batch counts or byte totals. Test setup uses the new constructor.
The dashboards use batch row-count and write-byte metrics. Byte-rate queries no longer group by type, and output row panels identify flushed DML-event rows.

Explanation
Issue [#6677] requires Statistics and its metrics to move into a dedicated sink package. The reviewed head adds downstreamadapter/sink/statistics, defines Statistics and its metric registration there, and updates sink and MySQL writer consumers to use the new package. The new package includes focused test coverage for post-flush DML tracking.

Regenerate both next-generation dashboards after correcting the row-rate description.
The query reports flushed DML rows per second, not DML events per second. Update the source description, then run make generate-next-gen-grafana; changing only the classic dashboard leaves both generated descriptions stale.
Suggested fix
- "description": "The number of dml events that sink flushes to downstream per second.",+ "description": "The number of DML rows that sink flushes to downstream per second.",
